Istanbul for Foodies with Alana Lowes

Visiting Istanbul time and time again, celebrity cook, Alana Lowes has discovered that there is more to authentic Turkish food than doner kebabs and mezze plates.

Fresh seafood—tick, meat on sticks—tick, sweet sticky desserts—tick, creamy cheese for breakfast—double tick… Istanbul is a ‘ticks-all-the-boxes’ culinary wonderland.  Join me as I unearth the cultural capital’s exotic and intoxicating flavours.

Best Breakfast Spot
Start your day with a real Turkish breakfast amid the bustling alleys of the Spice Bazaar in Eminönü.  I love to sample before I buy, and in Turkey it is encouraged.  

There are fresh slabs of beyaz peynir (mild, white cheese) or if you are game tulum peynir (goat’s milk cheese ripened in a goat skin casing), which despite its confronting appearance is absolutely delicious. Use large hunks of simit (sesame crusted pretzel) to attack the cheese, and follow with spicy salami and olives.  No breakfast in Istanbul is complete without a rich, strong Turkish coffee.

Sweet Mid-morning Treat
If you visit during summer, like I always have, an ice-cream is the perfect combatant to a warm Istanbul day.  In Turkey, dondurma (ice-cream) is generally bought from street performers. It is always a game of cat and mouse… I try to grab my ice-cream cone only to have it whipped away from under my nose time and time again. It is great for a laugh, mostly for the street performer, and for the crowd who gather to watch your misfortune.  

In the end it is worth the wait as Turkish ice-cream has a unique chewy texture and can be stretched without the fear of it breaking.  And as an added bonus, it does not melt as quickly as normal ice-cream, so you will not end up wearing it. 

Lunch Fit for a Sultan
When thoughts turn to lunch you need not look too far from the Spice Bazaar. In fact, just around the corner, my favourite restaurant in all of Istanbul, Hamdi Restaurant serves a feast fit for a Sultan, with views out over the Bosphorus River.  

I do not usually recommend a banquet menu, but this is the exception. Choose your own mezze selection, and make sure it includes ezme – a spicy tomato and pepper salad, from which I found inspiration for my Alana’s Pantry Spicy Turkey sauce.  Plunge pieces of bread into dip, savour the flavours of lamachun (Turkish pizza), and indulge in the jewel of the experience, a kebab platter with lamb and pistachio and spiced beef.  Trust me you will not be disappointed!

Another Sweet Snack
If you are lucky enough to be visiting during the holy month of Ramadan, you will be privy to special seasonal sweet treats. My favourite is the Tulumber – it is crunchy, syrup-coated, soft and fluffy all at the same time. Wait for the sun to set and join locals to indulge in the delicacy. 

Dinner like the Locals
Mix with local workers, feasting on grilled fish and sipping raki, at one of Sultanahmet’s best kept dining secrets, Ahirikapi Balikçisi (Keresteci Hakki Sokak 46, Cankurtaran/Ahırkapı).  Think rickety tables, colourful service, grilled calamari, buttered chilli prawns, cold beers, and the obligatory endless baskets of freshly baked Turkish bread.  

Skills to Take Home
I always do a cooking class while overseas. It is a fantastic way to learn about a culture and to collect new recipes to impress your friends back home.  

Selin from Turkish Flavours showed me through to her cosy kitchen in her apartment. Brimming with jars of marinating olives and plates of kaymak (creamy Turkish cheese) it looked like the set of a cooking show. Turkish cuisine involves hidden surprises – stuffed eggplants, stuffed figs etc – and one item on the menu that caught my eye was kaymakli kuru kayisi (stuffed apricots).  Selin walked me through her recipes step-by-step.  It was a real treat to hear her nostalgic stories about watching her mother cook dinner parties in kitchen in which we stood.

TV PRESENTER and food writer Alana Lowes has joined the country's biggest tea party as national ambassador - helping Australia's Biggest Morning Tea celebrate 20 years this May.
The local celebrity has joined the likes of Poh Ling Yeow, Dominique Rizzo and Matt Moran as a 2013 ambassador, committed to making every cup count in the fight against cancer.
One of Australia's most popular fundraising events, attracting over a million people every year and raising $110 million in the last two decades, Australia's Biggest Morning Tea turns 20 this May 23.
Alana said it was a privilege to be involved with such a long-running campaign that supports Australians and their families diagnosed with cancer.
"I certainly don't need any excuse to enjoy food and Australian's Biggest Morning Tea brings together two of my favourite passions - eating and raising money for cancer research, prevention and patient support," she said.
"I am so honoured and excited to be a part of this fantastic campaign and hope that my recipe will inspire you to host your own Biggest Morning Tea this year and help a wonderful charity."

Delicious spicy popcorn

Alana Lowe's Spicy Popcorn
Makes: 1 large saucepan filled with popcorn
Prep time: 2-3 mins
Cooking time: 5-7mins
Ingredients
2 tsp cayenne pepper (or less if you don't like it too spicy)
3 tsp sweet paprika
4 tbsp salt (flakes or table salt)
1 ½ cups popcorn kernels
4 tbsp olive oil
Method
Combine the cayenne pepper, sweet paprika and salt in a small bowl. Set aside.
Place a large saucepan over a medium heat, add 2 tbsp olive oil and the popcorn kernels. 
Ensure you have a tight fitting lid on.
Wait until you begin to hear the popcorn kernels popping and give the saucepan a gentle shake. 
Continue to cook until you hear the kernels are all popped. Remove from the heat.
Add the remaining olive oil and spice mixture and stir to combine.
Serve immediately while still warm.

Five Minutes with…Alana Lowes!

Alana Lowes may not have won the 2011 MasterChef title but she definitely won our hearts! The gorgeous Alana made a lasting impression on viewers when she took out third place in the competition and started a career she had only dreamt about.




These days the writer, presenter and actress spends most of her time heading off on food adventures around Australia and abroad for Cooking TV Series ‘A Taste of Travel’ on Network Ten. When she’s not filming, Alana works as a freelance food and travel writer with a weekly food column on ninemsn.com.au and regular columns in magazines such as OK!, NW, TV Week, Woman’s day, New Idea, Masterchef Magazine, That’s Life and the Taste lift out. Not to mention, she is also working as a brand ambassador for Eff Fruit Juices. Is there anything she can’t do?!

Alana took some time out of her hectic life to share some of her culinary secrets with us in Five Minutes With…(and also shares with us one of her all-time fave recipes, and it’s super easy!)

What is your favourite go-to meal to cook at home? 
Living in Brisbane we have a beautiful big deck on the back of our Queenslander which is perfect for outdoor cooking and eating.  I love to fire up the barbecue to cook meat or to grill vegetables.  The best part is there are no pots and pans to clean and it doesn’t heat up the house.

What is your ‘cheating in the kitchen’ tip?
I love using gourmet sauces as a quick marinade.  At the moment I am addicted to using spicy chipotle sauces as a marinade for sticky pork ribs – super simple!


What is the most common mistake you see amateur cooks (like us!) make? 
Season, season season! Particularly if you are cooking things from scratch.  The biggest lesson I learnt from the judges during my time on MasterChef is that home cooks don’t use enough salt and pepper and it is the salt and pepper which can really lift the flavour in your dish.






One ingredient you couldn’t live without and why? 
If I am being naughty it is chocolate, I love to use chocolate to make mousse, cakes or just to eat a few squares.  If I am being healthy, then I always have my fruit bowl full of apples as they are so versatile.  I can use apples in both sweet and savoury dishes.  The Jazz variety is my favourite as they are super crunchy and sweet and they hold their shape really well when cooked.

Your favourite place to eat out?
It all depends on which city I am in.  If I am in Brisbane I love Public, their Kentucky Fried Duck dish is amazing.  In Sydney, my hubby and I just have to stop in at MSG’s for a cocktail and something to eat.  The prawn toast and slow cooked lamb ribs are my favourite.  When I am in Melbourne I always feel like eating Xiao long bao (soup dumplings) and HuTong Dumpling Bar makes them to perfection.

Lemon and Lime Jelly with Marinated Raspberries

Alana grew up eating and loving jelly and as an adult – she still loves jelly! So much so, that she has created her very own sophisticated, adult version of a jelly dessert. And I kid you not, this jelly dessert offers a flavour explosion so amazing that you cannot stop at one serving! It may look pretty fancy, but it is super simple to make.


What you’ll need:


500ml Eff effervescent lemon and lime fruit juice
6 gold leaf gelatine sheets

For raspberries:
200g raspberries
Juice of 1 lime
1/2 cup mint leaves, bruised (to bruise place in one hand and clap hands together)
250ml water
6 tbsp caster sugar
Rose Persian fairy floss to serve

(serves six)

What to do:

Place 150ml of the lemon and lime juice into a small saucepan and place over low heat until it begins to just simmer. Remove from the heat.

Soak the gelatine sheets in a small bowl of cold water for 5 mins, remove and squeeze out the excess water. Place into the hot juice and whisk until gelatine is completely melted. Pour into a jug and allow to cool to room temperature.

Add the remaining juice and stir to completely combine. Pour into small glasses, leaving enough room to serve with the raspberries on top. Place into the fridge to set for 4 hours or overnight.

To prepare the marinated raspberries, place the water, lime juice, sugar and bruised mint leaves into a small saucepan and place over a medium heat. Bring to a simmer and cook until the mixture reduces 1/3 to a syrup. Allow to cook and then strain through a fine sieve. Pour over the raspberries.

To serve, top the jelly with a spoonful of the marinated raspberries and the fairy floss.

Alana Lowes returns to TV

FORMER Queensland MasterChef contestant Alana Lowes will return to our TV screens next month with her own show. 
The home cook has spent the past two months travelling the world filming a travel and food series, A Taste of Travel, which combines travel tips and insights with local cuisine.

Also starring fellow Queensland MasterChef contestant Skye Craig and presenter Scott McRae, the series explores the likes of Budapest, Croatia, Serbia, Turkey and local destinations such as Mildura, the Barossa and The Kimberley.

Hosting her own show has been a long-time dream for Lowes, and she said finally seeing it happen was beyond thrilling.

"I have had a fabulous time eating my way around, as well as seeing so many beautiful sights, and I can't wait to see it all come together," she said.

The series will premiere on Channel 10 on September 15.
